Ingredients
- 1 Whole chicken
- 1/4 Cup of Vinegar
- 1 Tablespoon of Adobo
- 1 Tablespoon of Cumin
- 1 Tablespoon of Oregano
- 5 Cloves of Garlic
- 1 Chicken Bouillon
- 2 Celery Sticks
- 1 whole Green Pepper
- 1 Whole Onion
- 1/2 Cup of Cilantro
- 1 Can of Tomato Paste
- 1 tablespoon of sugar
- 2 Tablespoons of Oil
- Water to cover chicken
Wash chicken with lime and rinse. Place chicken in a bowl and add; Adobo, cumin, oregano, garlic, chicken bouillon, celery, green pepper, onion, cilantro and tomato paste. Marinate for two hours. Set the stove on high heat, in a pot and add cooking oil. Wait until the oil is really hot then add the sugar and wait until the sugar Browns. When the sugar browns, add the chicken, piece by piece, make sure to brown the chicken on both sides. Once the chicken has browned on both sides, then add all the ingredients that were left in the bowl. Mix the chicken and the ingredients together. In the bowl that was used to marinate the chicken, add water in the bowl in order to get all the spices that were left over and pour it into the pot. Pour enough water to cover the chicken. Now you can add your potatoes. Bring down the heat to medium high. Let the chicken cook for about 30 to 45 minutes constantly watching it to make sure that the water doesn’t dry out completely. Once you see that the water is low make like shown in the video above, your chicken is ready.
