Ingredients (For 1 Serving of Mofongo)
• 1 Green Plantain
• 1 Garlic Clove
• ½ Teaspoon salt
• ½ Teaspoon Olive Oil
• 6 Pieces of Pork Cracklings ( optional to add more)
Ingredients (Shrimp Creole)
• 2 Tablespoons of Olive Oil
• 1 ½ Cup of Shrimp
• 1 Small Can of Tomato Sauce
• ½ of an Onion
• 3 Garlic Cloves
• 1 Packet of Sazon- Culantro y Achiote
• 1 Cup of Water
Mofongo-
Peel green plantain. Cut into small pieces and fry on medium- low heat. In order to see if the plantains are cooked, stick your fork in the piece of plantain, if the fork has no problem going through, then its cooked. In a “Pilon” add the garlic, salt and olive oil. Once you crush the ingredients together then add half a plantain and pork cracklings. Once you mash the ingredients together, add the other half of the plantain and a few more pork cracklings.
Shrimp Creole
Set stove to medium heat. In a pan add olive oil, garlic and onion. Simmer for about 5 minutes. Add tomato sauce and water. Simmer for about 10 minutes. Then stir in the shrimp. Cover and set stove on medium- low heat for about 10 minutes.
