M&M Cookie Bars

This past month has been such an amazing month! Is anyone out there with me on this!? I really hope so because I can’t seem to contain my excitement! I was proposed to by the love of my life and I feel so blessed! You would think that news would be the only big highlight of my month but add my dream job on the side and it’s a perfect dish! I can finally say HARD work has paid off.

Boy was it really hard climbing up that mountain but now it seems so small. Stay with me here. There is no situation you can’t overcome. Put on your sneakers and run up that mountain! Ok, maybe not run but you know what I mean.
pic 4 editIt’s a fresh breath of air when I can take time to post a recipe. Although you might have seen this type of recipe before I PROMISE they aren’t as easy as this one. I have baked these suckers like 100 times. I LOVE them. I am not the best baker, I leave that up to my friend that loves to bake. Me? Not so much BUT I love trying. That moment when any baked good actually looks good is a big pat on the back for me, from me. Yea. Moving on, you have to try these! They are chewy inside and crunchy on the outside. AMAZING. Don’t believe me? Good! Try it, than we can talk. Did you see how convincing I am to get you to bake!? So go on and bake already! If you have a get together, dinner, birthday or any type of party ever invented, and take a batch of these M&M Cookie Bars, seriously, you won’t regret it. #1 You will Look like a professional baker #2 you’ll probably be the only one who actually baked something at home that you didn’t buy, which brings me to #3 you are the hero of the starving souls that crave something sweet.

M&M Cookie Bars Recipe

Ingredients

-2 Cups of all purpose flour
-3/4 Cup of sugar
-1 Cup of brown sugar
-1 1/2 Stick of butter
-2 Whole eggs
-2 Teaspoons of Vanilla extract
-1/2 Teaspoon of baking soda
-1/2 Teaspoon of salt
-1 Cup of M&M’s ( add more if needed)
DSC_0005Preheat oven to 325 degrees. In a bowl add 2 cups of flour
Add half a teaspoon of salt
Add half a teaspoon of baking soda. Whisk together and set aside
In a small bowl melt 1 ½ sticks of butter. Make sure it cools down before mixing other ingredients

Add 1 cup of beautiful brown sugar to the butter, sorry I had to throw that in there:)
Add ¾ cup of sugar
Add 2 whole eggs
Mix together

Now add 2 teaspoons of vanilla extract
Mix well
Add the liquid ingredients to the dry ingredients
Fold in the liquid ingredients, DO NOT MIX. Just fold in the liquid until it becomes a thick batter. Do not be alarmed, it will be pretty thick.Fold in the liquid ingredients, DO NOT MIX. Just fold in the liquid until it becomes a thick batter. Do not be alarmed, it will be pretty thick

Once you have folded the ingredients together and the batter is thick, fold in all the M&M’s you’d like to add

Now, spray or add evenly butter to the pan. Try to get a large enough pan so that the bars can be thin

Place batter onto the pan. You will see that its very thick but no worries, its suppose to be like that

With a spatula spread the cookie batter on the pan the most you can. It will look like it’s not enough to cover the pan, but it will! Don’t worry!

Place the pan in the oven for 25 minutes, until golden brown

Here you have it! I promise this is the best dessert for a big group of people! Cut in small squares and you’ll have everyone begging for more:)

Mini Donuts 🍩 Ingredients 1/2 teaspoon salt 1 Mini Donuts 🍩

Ingredients

1/2 teaspoon salt
1 teaspoon baking powder
1/3 cup granulated sugar
2 tablespoons melted butter
1 egg
1/2 cup milk
2 teaspoons vanilla extract
Glaze:
1 cup powdered sugar
1 teaspoon vanilla extract
2 tablespoons milk
Instructions

Donut Batter:
Preheat oven to 350°F or turn on donut machine.
Grease a donut pan or donut machine.
In a bowl, mix flour, sugar, salt, and baking powder.
In another bowl, whisk egg, milk, butter, and vanilla extract.
Combine wet and dry ingredients. Avoid over-mixing.
Fill batter into donut pan/machine using a Ziplock bag with a corner snipped off.
Bake 8-10 minutes.
Decorate as desired.
Glaze:
Mix powdered sugar, vanilla extract, and salt in a bowl.
Add milk, whisk to combine. Add more milk/powdered sugar as needed to achieve desired consistency. (Optional: add food coloring).

I started loving lentil soup just a few years ago I started loving lentil soup  just a few years ago when one of my very close friends gave me some of her lentil soup to try. I have been missing out my whole life! Jordy, thank you for this amazing recipe! Now I can share it with all of you ❤️ 

Lentil Soup 
 
-16 oz Bag of lentils 
-1/4 Cup of olive oil 
-14 oz Sausage 
-1 ½ Teaspoon of salt 
-1/2 Teaspoon of black pepper 
- 1 Whole onion, diced 
-6 Garlic cloves, diced 
-2 Bay leaves 
-1 Sweet potato 
-2 Carrots 
-1/2 Teaspoon of red pepper flakes 
-1 Cup of chicken broth 
-12 Cups of water
 
1. Heat the oil in a large pot over medium heat. When the oil is hot, add the sausage and cook until slightly browned, tossing occasionally, about 5 minutes. 
2. Add onions and garlic, and saute for about 3 minutes (while scraping bottom of pan to get the browned bits), stirring frequently.
3.     Stir in chicken broth, water, lentils, salt, pepper and bay leaves. 
 
4.     Bring to a boil over medium-high heat, partially cover the pot and allow to cook for 30 minutes, occasionally stirring (stirring is important so that the lentils don’t stick to the bottom of the pot). 
 
5.     At the 30-minute mark, add the potatoes, red pepper flakes and carrots. 
 
6.     Cover the pot and continue to cook for an additional 15 minutes (in total it is 45 minutes to boil once you add the lentils). 
 
7.     Enjoy!

Ingredients: 

4 Chicken thighs
8 Oz of Mushrooms
4 Garlic cloves
1 Cup of chicken broth 
1/2 Cup of chopped onions 
1/4 Cup of red bell pepper 
1/2 Teaspoon of Salt 
1/4 Teaspoon of black pepper
1/2 Teaspoon of Tyme 
2 Tablespoons of Butter ( before mushrooms) 
1 Tablespoon of butter (before chicken) 
2 Tablespoons of olive oil 
 
Season the chicken thighs with salt, pepper and thyme, set aside. 
Heat the olive oil and 2 tablespoons of butter in an skillet over medium high heat. Add the mushrooms and allow to brown for about 3-4 minutes stirring until browned and reduced in size. Remove the mushrooms from the skillet and set aside. 
Heat the remaining 1 tablespoon of butter on medium high heat. Add the chicken skin down and allow to brown for 3 minutes on each side. 
Add red peppers, onions and garlic. Cook for about 2 minutes then add the chicken broth. Using a spoon, scrape the bottom of the pan so all the brown bits are loosened.Cover and let simmer for about 10 minutes. 
Add heavy cream and turn off the heat. 
Server over rice.

3 Bean Salad! The best side dish you’ll ever mak 3 Bean Salad! The best side dish you’ll ever make & taste! I PROMISE! 

Ingredients: 

3 Cans of beans ( I used pinto beans, red beans and dark red beans) 
1/2 of a red onion 
1/2 of a green bell pepper 
1/2 of a red bell pepper 
1/2 cup of cilantro 
1/4 cup of olive oil 
1/4 cup of vinegar 
1 whole lime 
1/2 Tbsp of salt 

In a bowl mix all ingredients together. Refrigerate for about 2 hours for best results. 

*Side note*- I personally boil the beans even if they are canned beans. I leave them to cool down and then make the salad.

In a large bowl, season the shrimp with onion powder and garlic powder; toss to coat, and set aside

In a large pan on medium-heat, add oil. Once the oil is hot, add onions, garlic and red pepper, stirring for about 3 minutes. Add your diced tomatoes, salt, adobo and coconut milk. Let simmer on medium heat for about 10 minutes. Add shrimp, cilantro and lime juice and cook until the shrimp are just cooked through, about 5 minutes more. Serve on rice!
