Homemade Fried Rice

Have you ever had days where you don’t know what to cook?  Like nothing comes to mind at all!? I have those days all the time. It’s going to sound kind of dorky but when I wake up in the morning I promise I’m already thinking about what I’m going to cook for dinner. So on these moments when I’m in the kitchen making life decisions I turn to take out food that I can make at home.

In another life I was half Chinese, half Italian. I can eat pizza and fried rice everyday if I had too. Unfortunately I can’t because I’d turn into a whale but it’s definitely on my wish list if I ever find a magical lamp!

Fried rice any one?  Here is an extremely easy recipe for fried rice. The great thing about fried rice is that you can literally add anything you’d like to it. In this recipe I added peas, eggs and scallions. I love the crunchiness of the scallions. This can go with any type of meat or chicken.

Now let’s talk about soy sauce.  You have to be very careful while picking soy sauce. Soy sauce is super salty. Just a few table spoons are enough. I buy the “La choy lite soy sauce”.
So forget about going out to buy take out and have homemade take out!

I will leave you guys to this recipe that you must try. It’s easy, tasty and you’ll look like a professional cook. Isn’t that what we aim for any ways!? Um I know I do.


Homemade Chinese Fried Rice Recipe

Ingredients

-1 1/2 Cup of rice
-1/4 Cup of frozen peas
-1/4 Cup of scallions
-3 Eggs
-1 Tablespoon of cooking oil
-1 Teaspoon of butter ( for eggs)
-1 Tablespoon of butter (for rice)
-3 Tablespoons of soy sauce(This is a lite soy sauce that i use. You can find it in your nearest super market)

IMG_2804Add 2 cups of water to a pot. Add a tablespoon of cooking oil and set the stove temperature on high.

While you are waiting for the water to come to a boil, rinse 1 1/2 cups of rice

When the water comes to a boil add the rinsed rice to the pot. Stir constantly so that the rice wont stick to the bottom of the pot. If you need the recipe for white rice on the side bar click on dinner and there you will find it

After the water evaporates turn temperature to low ( #3, if you have numbers on your stove) and let cook for about 15 minutes

While the rice is cooking, chop up 1/4 cup of scallions and set aside

Now in a bowl,crack 3 whole eggs and scramble
In a skillet with the stove set on medium heat, place 1 teaspoon of butter and let it melt
Once the butter is melted and it’s coating the whole pan, pour the eggs
Now scramble the eggs as shown above. I’m sure you are wondering “why i didn’t add salt”, It’s because the soy sauce contains enough salt so no worries. Set the eggs aside

In a small pan add a cup of water. Set stove on high heat
Once the water comes to a boil, add the 1/4 cup of frozen peas
Cook on high heat for about 10 minutes. After they are cooked, drain the water and set the peas aside

In a skillet add 1 tablespoon of butter
Once the butter is melted, add the rice to the skillet
Quickly add the 3 tablespoons of soy sauce and mix the rice till the soy sauce is spread evenly, if you’d like to put more? be my guest:) but remember its very salty!

Once the soy sauce is spread evenly add the scrambled eggs and the peas
oops! Don’t forget the scallions

Now mix it all together

I started loving lentil soup just a few years ago I started loving lentil soup  just a few years ago when one of my very close friends gave me some of her lentil soup to try. I have been missing out my whole life! Jordy, thank you for this amazing recipe! Now I can share it with all of you ❤️ 

Lentil Soup 
 
-16 oz Bag of lentils 
-1/4 Cup of olive oil 
-14 oz Sausage 
-1 ½ Teaspoon of salt 
-1/2 Teaspoon of black pepper 
- 1 Whole onion, diced 
-6 Garlic cloves, diced 
-2 Bay leaves 
-1 Sweet potato 
-2 Carrots 
-1/2 Teaspoon of red pepper flakes 
-1 Cup of chicken broth 
-12 Cups of water
 
1. Heat the oil in a large pot over medium heat. When the oil is hot, add the sausage and cook until slightly browned, tossing occasionally, about 5 minutes. 
2. Add onions and garlic, and saute for about 3 minutes (while scraping bottom of pan to get the browned bits), stirring frequently.
3.     Stir in chicken broth, water, lentils, salt, pepper and bay leaves. 
 
4.     Bring to a boil over medium-high heat, partially cover the pot and allow to cook for 30 minutes, occasionally stirring (stirring is important so that the lentils don’t stick to the bottom of the pot). 
 
5.     At the 30-minute mark, add the potatoes, red pepper flakes and carrots. 
 
6.     Cover the pot and continue to cook for an additional 15 minutes (in total it is 45 minutes to boil once you add the lentils). 
 
7.     Enjoy!

Ingredients: 

4 Chicken thighs
8 Oz of Mushrooms
4 Garlic cloves
1 Cup of chicken broth 
1/2 Cup of chopped onions 
1/4 Cup of red bell pepper 
1/2 Teaspoon of Salt 
1/4 Teaspoon of black pepper
1/2 Teaspoon of Tyme 
2 Tablespoons of Butter ( before mushrooms) 
1 Tablespoon of butter (before chicken) 
2 Tablespoons of olive oil 
 
Season the chicken thighs with salt, pepper and thyme, set aside. 
Heat the olive oil and 2 tablespoons of butter in an skillet over medium high heat. Add the mushrooms and allow to brown for about 3-4 minutes stirring until browned and reduced in size. Remove the mushrooms from the skillet and set aside. 
Heat the remaining 1 tablespoon of butter on medium high heat. Add the chicken skin down and allow to brown for 3 minutes on each side. 
Add red peppers, onions and garlic. Cook for about 2 minutes then add the chicken broth. Using a spoon, scrape the bottom of the pan so all the brown bits are loosened.Cover and let simmer for about 10 minutes. 
Add heavy cream and turn off the heat. 
Server over rice.

3 Bean Salad! The best side dish you’ll ever mak 3 Bean Salad! The best side dish you’ll ever make & taste! I PROMISE! 

Ingredients: 

3 Cans of beans ( I used pinto beans, red beans and dark red beans) 
1/2 of a red onion 
1/2 of a green bell pepper 
1/2 of a red bell pepper 
1/2 cup of cilantro 
1/4 cup of olive oil 
1/4 cup of vinegar 
1 whole lime 
1/2 Tbsp of salt 

In a bowl mix all ingredients together. Refrigerate for about 2 hours for best results. 

*Side note*- I personally boil the beans even if they are canned beans. I leave them to cool down and then make the salad.

-1/2 cup of coconut milk 
-1/4 tsp of salt 
-1 tsp adobo 
-1/2 cup of chopped cilantro 
-1/4 cup of lime juice 
-1 1/2 cup of diced tomatoes 

In a large bowl, season the shrimp with onion powder and garlic powder; toss to coat, and set aside

In a large pan on medium-heat, add oil. Once the oil is hot, add onions, garlic and red pepper, stirring for about 3 minutes. Add your diced tomatoes, salt, adobo and coconut milk. Let simmer on medium heat for about 10 minutes. Add shrimp, cilantro and lime juice and cook until the shrimp are just cooked through, about 5 minutes more. Serve on rice!
