It’s been WAY too long. Like seriously it’s been forever. There has been lots of changes and a lot of planning in my life and now I know that I can’t go another couple of months without blogging ever again. With that being said, here is a simple coconut shrimp stew recipe which goes great over rice!
Funny thing is, I don’t eat anything that swims. My taste buds have something against seafood. I wish I Loved it because it looks so good. My boyfriend on the other hand could eat seafood every day if you let him. Therefore I made this recipe for him. Now…
Just because you don’t like something doesn’t mean you can’t cook it. If you don’t like shrimp but everyone else around you does, there are simple instructions to cook it. To my understanding people will eat shrimp cold and with no flavor at all! I have to have flavor in everything I cook, so cooking shrimp, although I don’t like it, seemed pretty easy.
I used pre-cooked shrimp. They come in a small bag with the tail still attached. As you read the recipe you will see that you do not leave the shrimp cooking for long. Why? Because then they become very chewy, like rubber. That’s a big no, no for seafood lovers. Because these shrimp are already cooked all you have to do is let them hang out in the pot for about 5 to 8 minutes. That’s it! Simple and easy.
Garlic and Lime are shrimps best friends. Throw in a lot of both and you’ll create a party in someone’s mouth!

Coconut Shrimp Stew Recipe
Ingredients
-2 Bags of shrimps
-1 Whole diced onion
-1 Whole red pepper
-1 Can of diced tomatoes
-1/2 Cup of chopped cilantro
-1/2 Cup of lime juice
-5 Cloves of garlic diced
-1/3 Cup of coconut milk
-2 Tablespoons of olive oil
-1 Tablespoon of adobo( add more if needed)
Now to begin,Your bag of shrimp will be cold and hard because they are stored in the freezer, wash the shrimp with warm water so they can become soft
Once you feel that they are soft, with the tip of your nails, take off the tail of the shrimp
They should look like this after removing the tail

Dice your onions and set aside
Dice the garlic and set aside
Dice the red pepper and set aside
Set the stove to medium heat. Once the pan is hot, add the 2 tablespoons of olive oil
Once the oil is heated, add the onions and garlic. Let simmer for 3 minutes. While its simmering, toss the onions and garlic around in the pan
Then, add the peppers
Add the diced tomatoes shortly after the peppers
Add cilantro and let simmer for another 5 minutes
When you see that steam is coming out of the pan, add the shrimp
Cook on low-medium heat for about 8 minutes. You will see the shrimp turn pink, shrink and curl up
Then add 1/3 cup of coconut of milk
Also add 1/2 cup of lime juice
Add 1 tablespoon of adobo. Feel free to add more if needed.
