Guess what this month is!? Hispanic Heritage Month! I am so PROUD of being LATINA! Sazon, arroz, and Habichuelas run through these veins! I am so proud of all the Latin foodies who are representing their countries signature dishes year-round! I’m just so proud. I knew I had to bring up the heat this month and this is why I decided to share my Cheese Stuffed Yuca (Cassava root) Balls recipe. Can we say, YES PLEASE!? Fried yumminess with California Milk Queso Fresco cheese inside, just waiting to be dipped in a pool of cilantro sauce. Can you envision it!? If not, no worries, the video is below J

Fall is FINALLY here, and that only means that Christmas is around the corner and you already know how I feel about Christmas. I felt a little bit of breeze yesterday and thought, “CHRISTMAS IS ALMOST HERE!!” Crazy much? The holidays only mean food, food and more food, OH and family! But mostly food. These Cheese Stuffed Yuca Balls are every parties need to have appetizers. 1 pound of Yuca looks like it isn’t enough, but when you boil it, all of a sudden it grows, and you can get at least 20 balls out of just 1 pound of Yuca! You can buy Yuca (Cassava) frozen or the actual root in your grocery stores vegetable section. The cilantro sauce gives the Yuca balls life! It is so garlicky and cilantro-y…. Let me just let you be the judge! Try this amazing recipe!

Ingredients

  • • 1 Pound of Yuca (Cassava)
  • • 1 Tsp of Salt
  • • Half a Stick of Butter
  • • 1 Egg Yolk
  • • ½ Cup of Flour
  • • Extra flour for coating
  • • Oil for Frying

Instructions

  • Instructions for Yuca Balls
  • 1. Boil the Yuca on high heat for 15 minutes or until Yuca falls apart at the touch of a fork. Drain the Yuca and place in a bowl.
  • 2. Once the Yuca has cooled down, add salt, butter, egg yolk and flour. Smash all ingredients together until it is a mashed consistency.
  • 3. Add some flour to your hands. Place a table spoon full of the Yuca mixture in your hands and roll into a ball. Press down in the middle of the ball to make a hole and add the cheese cube. Close the ends together and roll into a ball again.
  • 4. Coat the ball in flour and set aside.
  • 5. In a pan, on medium high heat, add enough oil to cover the Yuca balls.
  • 6. Once the oil is hot, add the Yuca balls and fry until golden brown all around.
  • Instructions for Cilantro Sauce
  • 1. In a blender or food processor, add the garlic, Mayo, Lime juice, Vinegar and Cilantro. Blend together until smooth.

I started loving lentil soup just a few years ago I started loving lentil soup  just a few years ago when one of my very close friends gave me some of her lentil soup to try. I have been missing out my whole life! Jordy, thank you for this amazing recipe! Now I can share it with all of you ❤️ 

Lentil Soup 
 
-16 oz Bag of lentils 
-1/4 Cup of olive oil 
-14 oz Sausage 
-1 ½ Teaspoon of salt 
-1/2 Teaspoon of black pepper 
- 1 Whole onion, diced 
-6 Garlic cloves, diced 
-2 Bay leaves 
-1 Sweet potato 
-2 Carrots 
-1/2 Teaspoon of red pepper flakes 
-1 Cup of chicken broth 
-12 Cups of water
 
1. Heat the oil in a large pot over medium heat. When the oil is hot, add the sausage and cook until slightly browned, tossing occasionally, about 5 minutes. 
2. Add onions and garlic, and saute for about 3 minutes (while scraping bottom of pan to get the browned bits), stirring frequently.
3.     Stir in chicken broth, water, lentils, salt, pepper and bay leaves. 
 
4.     Bring to a boil over medium-high heat, partially cover the pot and allow to cook for 30 minutes, occasionally stirring (stirring is important so that the lentils don’t stick to the bottom of the pot). 
 
5.     At the 30-minute mark, add the potatoes, red pepper flakes and carrots. 
 
6.     Cover the pot and continue to cook for an additional 15 minutes (in total it is 45 minutes to boil once you add the lentils). 
 
7.     Enjoy!

Ingredients: 

4 Chicken thighs
8 Oz of Mushrooms
4 Garlic cloves
1 Cup of chicken broth 
1/2 Cup of chopped onions 
1/4 Cup of red bell pepper 
1/2 Teaspoon of Salt 
1/4 Teaspoon of black pepper
1/2 Teaspoon of Tyme 
2 Tablespoons of Butter ( before mushrooms) 
1 Tablespoon of butter (before chicken) 
2 Tablespoons of olive oil 
 
Season the chicken thighs with salt, pepper and thyme, set aside. 
Heat the olive oil and 2 tablespoons of butter in an skillet over medium high heat. Add the mushrooms and allow to brown for about 3-4 minutes stirring until browned and reduced in size. Remove the mushrooms from the skillet and set aside. 
Heat the remaining 1 tablespoon of butter on medium high heat. Add the chicken skin down and allow to brown for 3 minutes on each side. 
Add red peppers, onions and garlic. Cook for about 2 minutes then add the chicken broth. Using a spoon, scrape the bottom of the pan so all the brown bits are loosened.Cover and let simmer for about 10 minutes. 
Add heavy cream and turn off the heat. 
Server over rice.

Ingredients: 

3 Cans of beans ( I used pinto beans, red beans and dark red beans) 
1/2 of a red onion 
1/2 of a green bell pepper 
1/2 of a red bell pepper 
1/2 cup of cilantro 
1/4 cup of olive oil 
1/4 cup of vinegar 
1 whole lime 
1/2 Tbsp of salt 

In a bowl mix all ingredients together. Refrigerate for about 2 hours for best results. 

*Side note*- I personally boil the beans even if they are canned beans. I leave them to cool down and then make the salad.

-1 cup of diced onions 
-1 cup of diced red peppers 
-1/2 cup of coconut milk 
-1/4 tsp of salt 
-1 tsp adobo 
-1/2 cup of chopped cilantro 
-1/4 cup of lime juice 
-1 1/2 cup of diced tomatoes 

In a large bowl, season the shrimp with onion powder and garlic powder; toss to coat, and set aside

In a large pan on medium-heat, add oil. Once the oil is hot, add onions, garlic and red pepper, stirring for about 3 minutes. Add your diced tomatoes, salt, adobo and coconut milk. Let simmer on medium heat for about 10 minutes. Add shrimp, cilantro and lime juice and cook until the shrimp are just cooked through, about 5 minutes more. Serve on rice!

Recipe:
