You can say a blog is your own world. I love that about my blog. It’s all ME. With that being said, HAPPY October!!!!! I AM so excited that we can now welcome the holidays. Halloween, Turkey day & Christmas can now make its way to our homes. How you all know that I am Christmas crazy, I kind of already want to start decorating. Crazy much? I decided to just try to get through Halloween and Turkey day first. Of course that means I already have Halloween decorations up on my work desk & I can’t stop staring at them. They make me happy. The most exciting part about this month is HALLOWEEN TOWN. The best Halloween movie ever. Yes I am a Disney kid at heart & always will be. You’d think at the age of 26 I’d stop watching it but, nope, I won’t stop. Halloween town is the cutest Disney movie ever and they play it a million times every year. It’s so perfect for Halloween!

Carne Guisada

Its fall and fall calls for COMFORT FOOD! Carne Guisada is a very famous dish in my house hold. It goes with a side of white rice, red beans, sweet plantains and salad. Okay maybe that’s just the way I like it! Hehe.Carne Guisada, in translation, is beef stew. I suggest you take your time cooking this amazing dish so that it is pulled apartable (which is not a word) when you eat it. The art in this dish is making the meat as soft as possible. It’s juicy. Really Juicy. I love it! You’ll definitely love this easy Carne Guisada (beef stew) Recipe.

Carne Guisada Recipe

  • 2 Packs of meat chunks
  • 3 Chopped Carrots
  • 1 1/2 Tbsp of Oregano
  • 1 1/2 Tbsp of Adobo
  • 1 1/2 Packets of Culantro y Achiote
  • 1 Whole Onion
  • 4 Cloves of Garlic
  • 1/2 Cup of Cilantro
  • 3 Culantro Leafs
  • 1/3 a cup of Balsamic Vinaigrette 
  • 1 can of tomato sauce 
  • Lime for cleaning the meat
  • 3 Table spoons of Cooking Oil

Place the meat in a bowl. Wash with water. Now, add lime to the meat, make sure to rub the meat really good to clean the meat. ( I personally don’t like to see or smell the blood. If you like the blood skip this part) rinse the meat once again with water. Cut the meat chunks in to smaller meat chunks.

After you rinse the meat, add 1 1 /2 tablespoons of oregano, 1 1 /2 tablespoons of Adobo and 1 1/2 packets of culantro y achiote. Mix together and Set bowl aside. Set stove to high heat. Add 3 table spoons of cooking oil to a pot. DSC_0712

Once the oil is hot add the meat to the pot. Stir the meat until the sides of the chicken are brown. DSC_0713

Set stove to medium- high heat. Then chop the carrots, Onions, Cilantro and Culantro. DSC_0716DSC_0726

Now, add the carrots, onions, garlic, cilantro and culantro to the pot & stir.DSC_0730

Once your done stirring everything together, add  3 cups of water. Try to have the meat submerged in the water.DSC_0721 Cover the pot & let cook for about 45 minutes. Test the meat and check to make sure its soft. If it is soft, its ready for the rest of the ingredients.

Set stove to medium heat. Now, add 1 can of tomato sauce and 1/2 cup of balsamic vinaigrette & stir. DSC_0781 

Let the meat marinate in these amazing ingredients for about 10 to 15 minutes. It should look like this. Carne Guisada recipe

    I can’t believe the holidays are coming, but I’m happy for chillier weather so I can enjoy stews even more! This looks so juicy and flavorful!

Mini Donuts 🍩 Ingredients 1/2 teaspoon salt 1 Mini Donuts 🍩

Ingredients

1/2 teaspoon salt
1 teaspoon baking powder
1/3 cup granulated sugar
2 tablespoons melted butter
1 egg
1/2 cup milk
2 teaspoons vanilla extract
Glaze:
1 cup powdered sugar
1 teaspoon vanilla extract
2 tablespoons milk
Instructions

Donut Batter:
Preheat oven to 350°F or turn on donut machine.
Grease a donut pan or donut machine.
In a bowl, mix flour, sugar, salt, and baking powder.
In another bowl, whisk egg, milk, butter, and vanilla extract.
Combine wet and dry ingredients. Avoid over-mixing.
Fill batter into donut pan/machine using a Ziplock bag with a corner snipped off.
Bake 8-10 minutes.
Decorate as desired.
Glaze:
Mix powdered sugar, vanilla extract, and salt in a bowl.
Add milk, whisk to combine. Add more milk/powdered sugar as needed to achieve desired consistency. (Optional: add food coloring).

I started loving lentil soup just a few years ago I started loving lentil soup  just a few years ago when one of my very close friends gave me some of her lentil soup to try. I have been missing out my whole life! Jordy, thank you for this amazing recipe! Now I can share it with all of you ❤️ 

Lentil Soup 
 
-16 oz Bag of lentils 
-1/4 Cup of olive oil 
-14 oz Sausage 
-1 ½ Teaspoon of salt 
-1/2 Teaspoon of black pepper 
- 1 Whole onion, diced 
-6 Garlic cloves, diced 
-2 Bay leaves 
-1 Sweet potato 
-2 Carrots 
-1/2 Teaspoon of red pepper flakes 
-1 Cup of chicken broth 
-12 Cups of water
 
1. Heat the oil in a large pot over medium heat. When the oil is hot, add the sausage and cook until slightly browned, tossing occasionally, about 5 minutes. 
2. Add onions and garlic, and saute for about 3 minutes (while scraping bottom of pan to get the browned bits), stirring frequently.
3.     Stir in chicken broth, water, lentils, salt, pepper and bay leaves. 
 
4.     Bring to a boil over medium-high heat, partially cover the pot and allow to cook for 30 minutes, occasionally stirring (stirring is important so that the lentils don’t stick to the bottom of the pot). 
 
5.     At the 30-minute mark, add the potatoes, red pepper flakes and carrots. 
 
6.     Cover the pot and continue to cook for an additional 15 minutes (in total it is 45 minutes to boil once you add the lentils). 
 
7.     Enjoy!

Ingredients: 

4 Chicken thighs
8 Oz of Mushrooms
4 Garlic cloves
1 Cup of chicken broth 
1/2 Cup of chopped onions 
1/4 Cup of red bell pepper 
1/2 Teaspoon of Salt 
1/4 Teaspoon of black pepper
1/2 Teaspoon of Tyme 
2 Tablespoons of Butter ( before mushrooms) 
1 Tablespoon of butter (before chicken) 
2 Tablespoons of olive oil 
 
Season the chicken thighs with salt, pepper and thyme, set aside. 
Heat the olive oil and 2 tablespoons of butter in an skillet over medium high heat. Add the mushrooms and allow to brown for about 3-4 minutes stirring until browned and reduced in size. Remove the mushrooms from the skillet and set aside. 
Heat the remaining 1 tablespoon of butter on medium high heat. Add the chicken skin down and allow to brown for 3 minutes on each side. 
Add red peppers, onions and garlic. Cook for about 2 minutes then add the chicken broth. Using a spoon, scrape the bottom of the pan so all the brown bits are loosened.Cover and let simmer for about 10 minutes. 
Add heavy cream and turn off the heat. 
Server over rice.

Ingredients: 

3 Cans of beans ( I used pinto beans, red beans and dark red beans) 
1/2 of a red onion 
1/2 of a green bell pepper 
1/2 of a red bell pepper 
1/2 cup of cilantro 
1/4 cup of olive oil 
1/4 cup of vinegar 
1 whole lime 
1/2 Tbsp of salt 

In a bowl mix all ingredients together. Refrigerate for about 2 hours for best results. 

*Side note*- I personally boil the beans even if they are canned beans. I leave them to cool down and then make the salad.

In a large pan on medium-heat, add oil. Once the oil is hot, add onions, garlic and red pepper, stirring for about 3 minutes. Add your diced tomatoes, salt, adobo and coconut milk. Let simmer on medium heat for about 10 minutes. Add shrimp, cilantro and lime juice and cook until the shrimp are just cooked through, about 5 minutes more. Serve on rice!
