
I am totally back and better than ever! I can’t believe this is my first blog post in over a year! My website got hacked and all blog posts after the year 2016, were deleted. I know! A little part of me died when I couldn’t recuperate all of my work. BUT I learned my lesson to always back up my website and here we are. It took me such a long time to get into the groove of blogging again. I am so happy to be writing this right now. I made a goal to create more recipes and blog about them. BOOM! I am doing it right now. Ah so happy. Now that I got all my feelings out the way, let’s talk about these mini donuts. I think it’s only appropriate to make my comeback with something sweet. Do you have a sweet tooth? Because I have sweet TEETH! Lol, all of my teeth are sweet as hell. I LOVE dessert and I can never wait till my food is done before I’m reaching to grab a cookie or a donut. I was pretty used to buying donuts from a shop by my house, that I would call fancy donuts. I never thought it was so easy to just make them at home. I ran across a mini donut maker online and of course, I had to buy it. I went into the kitchen and started experimenting to come up with this recipe. It was so much fun because I was able to record it and post on my stories on Instagram. Instead of buying ingredients for the toppings, I was able to just look around my kitchen and see what I had on hand. You can use cereal, chocolate syrup, candy, condensed milk, fruits, sprinkles, crackers and I mean, do you see where I’m going with this!? You can use anything and everything to spice up your donuts. Keep in mind that you do NOT need a donut machine for this recipe. You can use a donut pan as well or get creative and find a way to bake them in the shape of a circle, the sky’s the limit, am I right? I had a blast thinking of different toppings and I can’t wait to have a get-together or dinner party to whip these up. Since we are all at home, being safe and keeping everyone else safe by doing so, this is a great recipe to make with your kids! All I’m saying is this girl is going to save a bunch of money on donuts now that I know I can make them at home. OH! And for everyone that might be thinking “Donuts= calories” they are BAKED. Lol Not sure if that helps but HELLO they are soooooo good! 2021, I am here baby and I’m bringing delicious recipes your way!

This goes without saying but I want to take a quick second to send my condolences to everyone who has been affected by the horrible virus that took over this world. It continues to take lives and my heart is with everyone mourning their loved ones and currently trying to survive it. This is a reminder to please be safe, stay at home, and wear your mask.
Baked Mini Donuts

Ingredients
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/3 cup granulated sugar
- 2 tablespoons melted butter
- 1 egg
- 1/2 cup milk
- 2 teaspoons vanilla extract
- Glaze:
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk
Instructions
- Donut Batter:
- Preheat oven to 350°F or turn on donut machine.
- Grease a donut pan or donut machine.
- In a bowl, mix flour, sugar, salt, and baking powder.
- In another bowl, whisk egg, milk, butter, and vanilla extract.
- Combine wet and dry ingredients. Avoid over-mixing.
- Fill batter into donut pan/machine using a Ziplock bag with a corner snipped off.
- Bake 8-10 minutes.
- Decorate as desired.
- Glaze:
- Mix powdered sugar, vanilla extract, and salt in a bowl.
- Add milk, whisk to combine. Add more milk/powdered sugar as needed to achieve desired consistency. (Optional: add food coloring).
