Yucca With Mojo Sauce

Its Sunday. You know what that means right? That tomorrow is Monday and a crazy week may be ahead of us. BUT. Before we start stressing this ridiculous Monday of ours lets go to a happy place and talk about food. Oh wait. And my new layout! I went for a clean & pink theme. I wanted something different. Something clean and beautiful. Not having the website work for a couple of weeks was hell for me. I thought it would be easy pizzy. Oh, but its definitely not. I applaud all website designers. OMG. How do you do this for a living??? All the codes were driving me up the wall! Finally i got the hang of it after, oh like, A MILLION TIMES. I’m just so happy to say its done and available for you to see. I hope and pray you all love it!

Summer could not possibly be any hotter here in Miami, Florida! Its about 100 degrees daily. No, I’m not kidding. With that being said, I’m 100 percent positive everyone is having either a BBQ or pool party. My family, of course, are a tad bit different. They love to go to the beach almost every weekend and call it a family reunion, when in fact its just a reason to eat burgers and drink some beer! Ok, maybe a lot of beer. There is also lots of birthdays in the summer around my way, and every time I’m asked to bring food to a party or event I ALWAYS bring Yucca! people love it. Like seriously. They LOVE it. Its easy. So obvi you cant go wrong.

Yucca is EXTREMELY easy to make. I like to buy them frozen so i can make the dish quicker. You can always buy the vegetable and peal it. Although, you can always just go with my lazy way and I’m sure you’ll be happier:) This dish is the perfect side dish. Trust me, it can even be your main dish! When ever i bring this side dish to a party or event, it goes fast! It is that extra kick that your dish needs.

Yucca With Mojo Sauce Recipe

Ingredients
-1 Bag of Yucca ( Frozen or peeled)
-1/2 Cup of olive oil
-1/2 Cup of minced garlic
-1 Cup of onions ( more if needed)
-1/4 Cup of vinegar

Fill a large pot with water. Leave room in the pot for the Yucca. Set the stove to high heat temperature. Once water is boiling, add the bag of Yucca.

It should look like this

Edit yucca 6While the Yucca is boiling, in a separate pan, set stove to medium heat and add 1 cup of olive oil.

Once the oil is hot, add 1 cup of onions. Let simmer for about 5 minutes.

Add half a cup of garlic. Mix well and let simmer for about 5 minutes.

Now, add 1/4 cup of vinegar. Let simmer for about 5 more minutes.

Edit yucca 11Now, once the Yucca is cooked, you will be able to put your fork though it. It should look like this. It should boil for about 30 minutes.

DSC_0254Now that the Yucca is done, pour out the water.

DSC_0257As you will see, i poured my Yucca in an aluminum foil pan because as i said earlier in my post, i ALWAYS take this as my dish to parties & events.

Once you pour the Yucca on a pan or bowl, add the Mojo that you made.

    I’ve never had yucca! Am I crazy? I see it at the store every week (in the produce section, I’ve never actually seen it frozen) and think that I should try it, but until this recipe I had literally no idea what to do with it! The sauce sounds killer though, so can’t go wrong, right?

      lol Your not crazy at all! I actually didn’t know what it looked like till my mom pointed it out in the super market one day! I thought it only came frozen! I think you should try it! With chicken or steak!

    Hi there! I have some relative who used to own an Asian-Spanish fusion restaurant and the husband was the chef. Every time we visit their house, they make fried yucca, among other things. He is always telling us how easy it is to cook with and he also uses the frozen king. Never had it with this mojo sauce. Love seeing something a little different!

      OMG you are so lucky to have a chef relative! Fried yucca is the BEST! You can even do this mojo sauce on the side for dipping!

    Florida does get hot! I used to live in Tampa, and the worst thing is it was hot hot hot from early May until sometime in October. Such a long summer! Anyway, this sounds like a terrific way to serve yucca — thanks!

Mini Donuts 🍩 Ingredients 1/2 teaspoon salt 1 Mini Donuts 🍩

Ingredients

1/2 teaspoon salt
1 teaspoon baking powder
1/3 cup granulated sugar
2 tablespoons melted butter
1 egg
1/2 cup milk
2 teaspoons vanilla extract
Glaze:
1 cup powdered sugar
1 teaspoon vanilla extract
2 tablespoons milk
Instructions

Donut Batter:
Preheat oven to 350°F or turn on donut machine.
Grease a donut pan or donut machine.
In a bowl, mix flour, sugar, salt, and baking powder.
In another bowl, whisk egg, milk, butter, and vanilla extract.
Combine wet and dry ingredients. Avoid over-mixing.
Fill batter into donut pan/machine using a Ziplock bag with a corner snipped off.
Bake 8-10 minutes.
Decorate as desired.
Glaze:
Mix powdered sugar, vanilla extract, and salt in a bowl.
Add milk, whisk to combine. Add more milk/powdered sugar as needed to achieve desired consistency. (Optional: add food coloring).

I started loving lentil soup just a few years ago I started loving lentil soup  just a few years ago when one of my very close friends gave me some of her lentil soup to try. I have been missing out my whole life! Jordy, thank you for this amazing recipe! Now I can share it with all of you ❤️ 

Lentil Soup 
 
-16 oz Bag of lentils 
-1/4 Cup of olive oil 
-14 oz Sausage 
-1 ½ Teaspoon of salt 
-1/2 Teaspoon of black pepper 
- 1 Whole onion, diced 
-6 Garlic cloves, diced 
-2 Bay leaves 
-1 Sweet potato 
-2 Carrots 
-1/2 Teaspoon of red pepper flakes 
-1 Cup of chicken broth 
-12 Cups of water
 
1. Heat the oil in a large pot over medium heat. When the oil is hot, add the sausage and cook until slightly browned, tossing occasionally, about 5 minutes. 
2. Add onions and garlic, and saute for about 3 minutes (while scraping bottom of pan to get the browned bits), stirring frequently.
3.     Stir in chicken broth, water, lentils, salt, pepper and bay leaves. 
 
4.     Bring to a boil over medium-high heat, partially cover the pot and allow to cook for 30 minutes, occasionally stirring (stirring is important so that the lentils don’t stick to the bottom of the pot). 
 
5.     At the 30-minute mark, add the potatoes, red pepper flakes and carrots. 
 
6.     Cover the pot and continue to cook for an additional 15 minutes (in total it is 45 minutes to boil once you add the lentils). 
 
7.     Enjoy!

Ingredients: 

4 Chicken thighs
8 Oz of Mushrooms
4 Garlic cloves
1 Cup of chicken broth 
1/2 Cup of chopped onions 
1/4 Cup of red bell pepper 
1/2 Teaspoon of Salt 
1/4 Teaspoon of black pepper
1/2 Teaspoon of Tyme 
2 Tablespoons of Butter ( before mushrooms) 
1 Tablespoon of butter (before chicken) 
2 Tablespoons of olive oil 
 
Season the chicken thighs with salt, pepper and thyme, set aside. 
Heat the olive oil and 2 tablespoons of butter in an skillet over medium high heat. Add the mushrooms and allow to brown for about 3-4 minutes stirring until browned and reduced in size. Remove the mushrooms from the skillet and set aside. 
Heat the remaining 1 tablespoon of butter on medium high heat. Add the chicken skin down and allow to brown for 3 minutes on each side. 
Add red peppers, onions and garlic. Cook for about 2 minutes then add the chicken broth. Using a spoon, scrape the bottom of the pan so all the brown bits are loosened.Cover and let simmer for about 10 minutes. 
Add heavy cream and turn off the heat. 
Server over rice.

Ingredients: 

3 Cans of beans ( I used pinto beans, red beans and dark red beans) 
1/2 of a red onion 
1/2 of a green bell pepper 
1/2 of a red bell pepper 
1/2 cup of cilantro 
1/4 cup of olive oil 
1/4 cup of vinegar 
1 whole lime 
1/2 Tbsp of salt 

In a bowl mix all ingredients together. Refrigerate for about 2 hours for best results. 

*Side note*- I personally boil the beans even if they are canned beans. I leave them to cool down and then make the salad.

In a large pan on medium-heat, add oil. Once the oil is hot, add onions, garlic and red pepper, stirring for about 3 minutes. Add your diced tomatoes, salt, adobo and coconut milk. Let simmer on medium heat for about 10 minutes. Add shrimp, cilantro and lime juice and cook until the shrimp are just cooked through, about 5 minutes more. Serve on rice!

Recipe:
