Today I feel like writing. Today I feel like shouting “WHAT THE CRAP IS WRONG WITH THIS WORLD”. We really need to do better guys. I mean I have been hearing the most horrifying stories and it creeps me out to think that we are bringing our children into a pretty messed up world.

I know this has nothing to do with cooking. Like at all. But this is a food…blog and because the word blog is in there, then this is my stage to talk, a lot. This bullying crap is out of control. Today I take a stand against bullying. IT NEEDS TO STOP.

People should stop bullying and get a life. Get a hobby. Read a book, or I don’t know mind your own business and leave other people alone. The sad part is that people don’t think there will be any consequences to their bullying. One day a bully may have kids, which may get bulled too. Don’t leave room or space for the universe to get back at you for bullying. I’m sick of it. IT NEEDS TO STOP.

Now to move along to the whole point of this blog hehe.

Gandules? YES PLEASE! This rice is a BIG deal. The flavor is unbelievable! Don’t know how to cook it? Well I’m here to save the day! Below find the Recipe for Arroz Con Gandules!

Recipe for Arroz Con Gandules ( rice with green pigeon Peas)

Ingredients 

– 5 cups of white rice

-1 can of Gandules Verde Con Coco ( green pigeon Peas with coco)

-1/2 cup of Sofrito (or you can buy the Goya Recaito)

– 1 leaf of Culantro

– 1/3 cup of onions

-1/2 cup of tomato sauce

-3 packets of Culantro y Achote

-1/3 cup of Cilantro

-1 Tsp of garlic

– 2 Tsp of cooking oil

– 1 Tsp of Salt or Adobo ( i mix both)

Set stove to high heat. Add 2 table spoons of cooking oil. once the oil is hot, Add 1 table spoon of garlic and 1/3 cups of onions. Let simmer for about 1 minute. Then turn heat to medium heat and add 1/2 cup of tomato sauce. Stir and let simmer for 1 minute and add 3 packets of Culantro y Achote and stir.

(FYI this is all being added one after another) Add either 1 table spoon of adobe or salt. Stir. I like to mix both. Then add 1/2 cup of Sofrito. Add 1 leaf of Culantro. Stir. Finally add the can of beans and stir.

Set stove to high heat and add 5 1/4 cups of water. Stir and wait until the water boils.

While the water is boiling, get 5 cups of rice and rinse with water. Once the water has boiled, pour the rice into the pot. Stir quickly as the rice will stick to the bottom of the pot.

SIDE NOTE: Lets talk about the water, i just add enough water to cover the rice, you can test it to see if you have enough water by sticking your spoon in the middle of the rice, if it stands without falling then it has enough water. If the spoons falls, it has  too much water. Try never to put too much water because  it becomes mushy & over cooked.

If you think the water is not yellow enough, you can add another packet of Culantro y Achote. If you are trying to watch how much salt you put in the rice, don’t add another one.

Stir the rice until you see little holes, as shown above. Then cover the rice and set the stove on low heat ( between low and medium) 

Wait about 15 to 20 minutes for the rice to cook then flip the rice ( move it around so the top of the rice gets cooked as well) Once you flip the rice set stove to low and serve!

    Hey just a quick question! Why did you use gandules with coconut water? I never did that before when I make arroz con gandules but it sounds very interesting! 🙂

    I love arroz con gandules since I was a little girl. I’m going to try this recipe.
    One question: In your list of ingredients you have 1 tsp of salt or adobo, but in the instructions, underneath the picture you say to add 1tbsp of salt or adobo. Which one is correct?

-2 tbsp of oil 
-1 lb of shrimp 
-1/2 tsp of garlic powder 
-1/2 tsp of onion powder 
-4 garlic cloves 
-1 cup of diced onions 
-1 cup of diced red peppers 
-1/2 cup of coconut milk 
-1/4 tsp of salt 
-1 tsp adobo 
-1/2 cup of chopped cilantro 
-1/4 cup of lime juice 
-1 1/2 cup of diced tomatoes 

In a large bowl, season the shrimp with onion powder and garlic powder; toss to coat, and set aside

In a large pan on medium-heat, add oil. Once the oil is hot, add onions, garlic and red pepper, stirring for about 3 minutes. Add your diced tomatoes, salt, adobo and coconut milk. Let simmer on medium heat for about 10 minutes. Add shrimp, cilantro and lime juice and cook until the shrimp are just cooked through, about 5 minutes more. Serve on rice!

Harina de Maiz! I grew up eating Harina de Maiz wi Harina de Maiz! I grew up eating Harina de Maiz with lots of cinnamon on top! 

We all have a different name for this! Some may call it Crema de Maiz or Farina de Maiz.
