Now that I’ve got that off my chest, let’s talk about Moro De Habichuelas. English? Rice with beans together in a beautiful blend of savory spices.
Let me stop! I can’t honestly talk to you all like this! Let’s be real, Moro De Habichuelas is the bomb diggaty! This dish is typically found in the Caribbean’s but of course the United States got a taste of this amazing rice and you can find it in pretty much every state! And if you can’t find it already made, then here is the recipe!
Moro De Habichuelas gets most of its flavor from the sausage, ham or bacon you fry up in the begging of the recipe. The Sofrito and the seasoning get soaked up by the rice giving you a savory treat.
Feel free to use the beans that come in a bag. I just use the canned beans because I’m extremely lazy at times and it takes way too long to make the other ones. I heard something about leaving the beans soaking in water over night so they can soften and yup not my..thing. So on that note, let’s move along. Try to taste the water of the rice while you go. The water should always be more seasoned than expected. Why? No, it’s not just because I like over seasoned food, but because the rice soaks up the water and it needs enough salt to taste um, what’s the word? Exquisite! I’m really trying here, can you tell?
Back to this very Hispanic dish, you can use this side dish with meats or chicken. Whichever choice of protein you use, make sure it has a sauce and I promise the Moro with the sauce of the meat or chicken will have your taste buds singing. By the way, it took me a few MAJOR fails to make this rice when I started to learn how to cook. So, some advice? Don’t panic! It will come out perfect, just follow these easy instructions. I BELIEVE in you.
How is everyone’s spring break? I was off from work but not school! I know it sucks big time. What college you know doesn’t have spring break? Oh wait, mine. I spent lots of time with the people I love and cooked a little bit too much. Never mind too much cooking doesn’t exist! Cooking is the shit! Now go get your cook on!
Ingredients
-2 Cups of rice
-1/4 Cup of oil
-1/4 Your choice: Sausage,Ham,Bacon Chopped
-3 Tablespoons of Sofrito (Check “How To’s” tab for recipe)
-2 Tablespoons of tomato sauce
-2 Packets of Sazon
-1 Can of beans (Your choice: Example;Red,Black,Pink)
-2 1/4 Cups of water
-1 Teaspoon of salt
-Half a block of Maggie(Optional)
Chop 1/4 cup of your choice; Sausage, ham or bacon and set aside.This gives the rice a lot of flavor
In a pot,pour 1/4 cup of oil. Turn heat on medium high
Once the oil is hot, pour in the sausage, ham or bacon of your choice in the pot and let fry till golden brown
Once golden brown, add the 3 tablespoons of sofrito. If you dont have sofrito made, chop up garlic,cilantro,green pepper and onion. The amount should add up to about 3 tablespoons all together.
Now add the 2 tablespoons of tomato sauce
Add 2 packets of sazon. If you want more flavor or in other words if you like salty food, add another packet.
After letting all the ingredients simmer for a minute or two, add the can of beans. You can choose the type of beans you’d like
Add 2 cups of water
Last but not least, add the teaspoon of salt. If you like salty food, add half a block of maggie. Set heat on high and wait for the water to come to a boil
While the water is coming to a boil, rinse the 2 cups of rice
Once the water is boiling, add the 2 cups of water and stir all the ingredients together
Stir the rice every minute or two so that it won’t stick to the bottom of the pot. Let the water come to a boil once again and then cover the pot. Quickly set the heat between low and medium and let the rice cook for about 15-20 minutes
After about 20 minutes the rice should look like this. Everything will be right on top of the rice
At this point you have to flip the rice so that the top can cook. Taste the rice from the bottom of the pot to make sure its soft. If when you taste it, it’s hard? Then you need to pour 2 tablespoons of water on the rice and place aluminum foil on top. Cover the rice and let cook, this helps trap the heat and the rice cooks faster. But if its thoroughly cooked the first time just cover and place heat on low for 5 to 10 minutes.
It’s super easy and filled with mind blowing flavor. This is actually considered a side for pretty much anything you make. If you have any doubts or questions don’t hesitate to ask:)
