SONY DSC

August is almost gone. Do you know what that means? We are closer to Christmas! What did you think I was going to say!? Judge if you want too but I CANT wait till Christmas. Although I am anxious for December to roll around, I have to except the reality that, um, it’s still August and it’s as hot as can be outside. Lately, I’ve been pretty much all over the place. With the wedding planning and Cookitgirl growing, its been.. well, you know…CRAZY! BUT I am so grateful for all of the new readers and for my very special day! People warned me that wedding planning would be stressful. They lied. It’s SUPER stressful HA. Although the stress is there just hanging out with us, I am still so very excited for that special day to come!

SONY DSC

So I’m hanging out with my mom at the moment. Watching baggage claim, which is hilarious might I add, and I wanted to take this time to share a special recipe with you all. In Spanish it’s called “Asopao”. Translation? Stewed Rice. This recipe has delicious pieces of my FAVORITE “Salchichon” ( Salami).

Ok, ok, ok I know what you’re thinking, maybe I like rice a little too much. It might be true. Just might    * cough, cough*. On that note, my obsession with rice meets this amazing, savory dish that is bursting with flavor! You add more water than usual and let the rice cook a little longer. I love it and I hope you love it too!

Recipe below:)

Asopao De Salchichon Recipe ( Stewed Rice with Salami Recipe)

Ingredients

-4 Cups of salchichon
-1/4 Cup of cooking oil
-3 spoons of sofrito
-1 Cup of rice
-2 Culantro y Achote packets
-2 Tablespoons of salt
-9 cups of water
-3 Leafs of Culantro
-1/2 Cup of chopped Cilantro

SONY DSC

Set stove to medium/high heat. In a pot, add 1/4 cup of cooking oil. When the oil is hot, add 4 cups of chopped salchichon ( feel free to substitute salchichon for chicken or meat). Cook salchichon till golden. Now add 3 spoons of sofrito .

SONY DSCSONY DSCSONY DSCSONY DSC

Now add 3 leafs of culantro, 1/2 cup of cilantro. Set stove temperature to high and add 3 cups of water.

SONY DSC

SONY DSCSONY DSC

Let the water come to a boil.

SONY DSC

Once the water is boiling, get one cup of rice and rinse. Add the cup of rice to the pot. You may think its only a little bit of rice but the rice will grow 3 times its size so no worries.

SONY DSCSONY DSC

Remember that with rice you always have to stir as you go. Now, add 2 packets of culantro y achote and 2 tablespoons of salt. Stir the ingredients and rice together.

SONY DSCSONY DSC

Add 6 cups of water and bring the temperature down to low/medium heat.

SONY DSC

The pot should look like this. Try to pay attention to the pot and stir every 5 minutes. The rice will start opening. If you see that the rice starts to dry add more water.

SONY DSC

After about 25 to 30 minutes of stirring the rice should look like this. As you can see, the rice will look as if its split in two that means its open and ready to eat!

SONY DSCHere you have Asopao Con Salchichon. I LOVE this dish! Hope you love it too!

I started loving lentil soup just a few years ago I started loving lentil soup just a few years ago when one of my very close friends gave me some of her lentil soup to try. I have been missing out my whole life! Jordy, thank you for this amazing recipe! Now I can share it with all of you ❤️

Lentil Soup

-16 oz Bag of lentils
-1/4 Cup of olive oil
-14 oz Sausage
-1 ½ Teaspoon of salt
-1/2 Teaspoon of black pepper
- 1 Whole onion, diced
-6 Garlic cloves, diced
-2 Bay leaves
-1 Sweet potato
-2 Carrots
-1/2 Teaspoon of red pepper flakes
-1 Cup of chicken broth
-12 Cups of water

1. Heat the oil in a large pot over medium heat. When the oil is hot, add the sausage and cook until slightly browned, tossing occasionally, about 5 minutes.
2. Add onions and garlic, and saute for about 3 minutes (while scraping bottom of pan to get the browned bits), stirring frequently.
3.     Stir in chicken broth, water, lentils, salt, pepper and bay leaves.

4.     Bring to a boil over medium-high heat, partially cover the pot and allow to cook for 30 minutes, occasionally stirring (stirring is important so that the lentils don’t stick to the bottom of the pot).

5.     At the 30-minute mark, add the potatoes, red pepper flakes and carrots.

6.     Cover the pot and continue to cook for an additional 15 minutes (in total it is 45 minutes to boil once you add the lentils).

7.     Enjoy!
