Sweet Plantain & Ground Beef Empanadas



  • 3 Sweet plantains
  • 1 Pound of ground beef
  • Half of an onion
  • 3 Cloves of garlic
  • 1/3 Cup of cilantro
  • 1 Teaspoon of salt
  • 1/8 Cup of green olive juice from the bottle of green olives
  • 1 Can of tomato
  • 1 A packet of cilantro y achiote
  • 1/3 Cup of Flour 


  1. Cut the end corners of the plantains and cut plantains in half with the skin still on.
  2. Boil water in a pot and add plantains. Boil the plantains for about 15 minutes.
  3. After the plantains have boiled, take the plantains out of the water and let them cool.
  4. Once the plantains are cool, take off the skin and add to a bowl.
  5. Mash the plantains with flour and set aside.
  6. Set stove to medium-high heat.
  7. To a pan, add the ground beef.
  8. Stir the beef till you see that it is no longer pink in color.
  9. Add the onions, garlic, culantro, salt, juice from a green olives bottle, tomato sauce and cilantro y achiote.
  10. Mix all ingredients and let simmer for about 15 minutes.
  11. Get a scoop of the sweet plantain dough and place it in the middle of a piece of plastic wrap.
  12. Sprinkle flour on top of the plantain, fold the plastic wrap on top of the plantain and press down with your hands till you form a thin circle.
  13. Add ground beef in the middle of the circle and fold the circle in half, at all times using the plastic wrap.
  14. Press down on the edges with a fork.
  15. Let the empanadas sit for about 5 minutes.
  16. Set stove to medium-high heat and once the oil is hot, add the empanadas.
  17. Fry the empanadas till the sweet plantain turns golden in color.
  18. Drain empanadas on paper towels.
  19. Enjoy!


This is a serving of 5 empanadas, there will be a lot of meat leftover. Feel free to add more plantains to boil for more empanadas.
