Southwestern Egg Rolls with Salsa

  • 2 Chicken Breast
  • 1/4 Tsp of salt
  • 1/4 Tsp of black pepper
  • 1/2 Tsp of chili powder
  • 1/2 Tsp of garlic powder
  • 1/2 Tsp of onion powder
  • 1/2 Cup of corn
  • 1/2 Cup of chopped green chilies
  • 1/2 Cup black beans
  • 1 Cup of pepper jack cheese
  • 1/4 Cup of cooking oil for chicken
  • Cooking oil to fry (enough to fill your pan)
  • Egg roll wraps
  • Fresh Cravings Salsa


  1. Clean chicken breast with lime or vinegar and rinse. Chop chicken breast into small pieces.
  2. In a bowl combine chicken breast, salt, black pepper, chili powder, garlic powder and onion powder, set aside.
  3. Set stove to medium-high heat and add cooking oil.
  4. Once the oil is hot, add the chicken to the pan. Stir the chicken so that the chicken does not stick to the pan or burn. Let the chicken cook for about 10 minutes.
  5. Add corn, beans and chopped green chilies to the pan. Stir and let cook for about 10 minutes.
  6. Turn off stove and add cheese to pan and stir.
  7. On an egg roll wrap, add the chicken mixture and fold according to package directions using water or egg wash to seal the edges.
  8. Set stove to medium-high. In a frying pan, add enough oil to submerge the egg rolls.
  9. Once the oil is hot, add egg rolls and cook until both sides are browned.
  10. Serve with Fresh Cravings Salsa!
