Ropa Vieja Recipe ( Shredded Beef)

Ingredients

  • 1 Pound of Flank Steak
  • 2 Tablespoons of oil
  • 1 Whole Green Pepper
  • 1 Whole Red Pepper
  • 1 Whole Onion
  • 1 Small Can of Tomato Sauce
  • 1/2 Teaspoon of Cumin
  • 1 Tablespoon of Salt
  • 1/4 Cup of Green Olives
  • 1 Bay Leaf
  • 1 Cup of White cooking Wine
  • 1 Cup of Water (from were steak was cooked)
  • 1 Packet of Sazon- Culantro y Achiote

Boil flank steak on high for about 2 hours or 1 hour if using a pressure cooker. Once the flank steak is tender, shred. In a pan add: cooking oil, red & green peppers, onions, tomato sauce, cumin,salt,  green olives & 1 bay leaf. Let all the ingredients simmer for 5 minutes. Add the shredded meat to the pan. Mix together. Then add 1 cup of white cooking wine & 1 cup of the water used to boil the steak. Cook on medium- low heat for about 15 minutes.
