Potato Salad three ways/ Ensalada de Papa Tres Maneras

  • ½ Cup of Olive oil
  • ¼ Cup of Vinegar
  • 1 Teaspoon of salt
  • ¼ Cup of diced onions.

In a bowl add diced onions, olive oil, vinegar and salt. Set bowl aside to marinate.

Potato salad without Mayo

  • 3 Pounds of diced potatoes
  • 3 Boiled eggs diced
  • 1 Tablespoon of salt
  • 2 Pounds of Diced Carrots  
  • 2 Diced apples
  • 1 Cup of green peas
  • ¼ Cup of diced sweet red peppers (Pimientos Morrones)

Add water, salt and potatoes to a large pot. Boil the potatoes for about 20 to 30 minutes or until a fork can sink into the potatoes easily. Place potatoes in a bowl and set aside. Boil the carrots, green peas and eggs together for about 15-20 minutes. Once all ingredients cool off, dice eggs, carrots and potatoes into small pieces and add in a bowl. Now dice the apples (we leave this for last due to the apples changing color, we want it to look pretty!) and add to the bowl. Pour marinate in bowl and mix all ingredients together.

  • 3 Pounds of diced potatoes

  • 1 Tablespoon of salt
  • 2 Pounds of Diced Carrots 
  • 2 Diced apples
  • 1 Cup of green peas
  • ¼ Cup of diced sweet red peppers (Pimientos Morrones)
  • 1 Can of Diced Beets
  • ¾ Cup of Mayonnaise
