Guineitos en Escabeche + AIR FRYER GIVE AWAY

It’s giveaway time!!! Finally, after a million years I’m doing the giveaway that should have been posted about 3 weeks ago. I really wanted to do it with this amazing recipe that reminds me of the Dominican Republic but with a Puerto Rican twist. When I go to the Dominican Republic, we have green bananas as a side with pretty much everything. I miss being there so much! If it were for me, I would go at least 3 times a year. I know at this moment everyone is talking about everything that is happening with tourists, but the truth is, the Dominican Republic is the most beautiful place to visit. The people are extremely nice, the food is amazing, the views are incredible and there’s Presidente everywhere, aka too many reasons to not go…..

When I am there, we only add onions, vinegar, oil, salt, and pepper but this recipe right here is on the Puerto Rican side, they add way more things to add more flavor since it is one of their signature side dishes. I can already hear you guys asking for the Mollejitas BUT that will be for another post! While I was preparing for this recipe, I realized that a lot of people don’t even know what to do with these green bananas. I purchase them in Hispanic supermarkets and there is always a ton of them. Isn’t it great how many different bananas and plantains there is!? I love all things banana and plantain related. I can eat sweet plantains with everything, totally going off subject over here. Try this amazing and easy recipe, you will love it! Some people like to eat it warm, but the best way to eat it is cold. So delicious!

Guineitos en Escabeche Recipe

Yield: 4 as a side

Guineitos en Escabeche Recipe

Ingredients

  • 6 Green bananas
  • Half of an Onion
  • ½ Cup of olive oil
  • ¼ Cup of vinegar
  • 1/2 Tsp of salt
  • 1 Tbsp of whole black pepper peppercorns
  • ¼ Cup of green olives with red peppers
  • 2 Bay leaves

Instructions

  1. Bring a pot of water to boil.
  2. Cut green bananas into half an inch slices and add to the pot of water.
  3. Boil bananas for 15 minutes on high heat, then drain, place in a bowl and set aside.
  4. Then, heat the olive oil in a pan over medium heat.
  5. Once the oil is hot, add onions, green olives with peppers, salt, vinegar, peppercorns and bay leaves.
  6. Simmer for 10-15 minutes.
  7. Pour mixture over the bananas and place in refrigerator for 2-3 hours.
  8. Enjoy as a side with rice, beans and meat!
